One of my goals with "The Zucchini Project" is the encouraging of kids in eating my homegrown produce. The savings are great when you plant your own food, but the downside is the objection of youngsters to your boatload of zucchini. One of my favorite solutions is to plant interesting and unusual varieties. If it looks good, it might just taste good! Yellow summer squash is one way of approaching this. It started with a packet of yellow zucchini a couple of summers ago. I don't know that the flavors are hugely different, but I like the yellow summer squash varieties just a bit more than the typical green zucchini. Some of the kiddos follow suit, and prefer the yellow zucchini to the green.

My boys love to eat what they grow so getting them to help me plant and tend to the garden is a must! They also like to pick out some veggies at the store and help to cook them at home.
ReplyDeleteUsually dipping works. Ranch dip is my dip of choice, but so long as they have something to dip those veggies into--hummus, ranch dip, spinach dip, whatever. Works well fairly often. :)
ReplyDeleteI'd say start when they're young and don't give up. My parents gave up on me and I'm 27 and just now starting to eat salads and other foods. They had a garden when I was growing up too. Unfortunately, I still don't like squash or zucchini. Maybe it's the textures. I liked zucchini bread...until I found out it had zucchini in it. :) I say, be sneaky.
ReplyDeleteMy kids love vegetables, but probably because I introduced them at a young age and bribed them with dessert if they ate them. My daughter isn't so fond of raw carrots but loves them cooked and my son will not eat brussel sprouts, but otherwise, they love them! Now if I could only get my husband to eat them without smothering them in cheese sauce or butter! I also load things with veggies though, spaghetti sauce always has carrots and celery chopped into it, chili is loaded with the same, I try to get as much into them at supper time as possible because they don't really eat them during the day (but do eat fruit).
